Chef: (n) professional cook

“Vanity, vanity, kitchen is thy name.”

You may note that I have altered the adage.

It does not matter if it’s a man or woman–if you start talking about cooking, the reaction falls into two categories:

  1. “I don’t cook, I will never cook, I will not touch a pan. Serve me.”
  2. “I’m such a good cook, people think I should start my own restaurant.”

Folks get very nasty about their ability to stir sugar in with spice to make something nice. They’re convinced they have the best recipe for any delicacy.

This is confirmed by dozens of shows on television, with chefs competing with one another for the honor of being chief cook and bottle washer.

What is it about the human race that causes us to believe that we have a passable ability to serve a meal instead of the overwrought notion that our platter of “pleasables” should be offered to wine and dine kings?

Do you really have the best barbecue sauce in the country?

Is the secret to a great turkey to deep fry it?

Are green beans better with almonds?

Does the extra thirty seconds of whipping the egg whites truly make a better meringue?

Is hot sauce the universal elixir for “delish?”

Even if we can convince all the brothers and sisters of Earth that we are alike, equal and that no one is better than anyone else, after that meeting is over, there will be someone who will insist they should cook the victory meal–because they’re a better chef.

Appoint

dictionary with letter A

Ap·point (v): to assign a job or role to someone.

Everyone has stood emotionally naked in a gymnasium and endured the indignity, nervous energy and frantic, sweaty sensation of choosing up sides. It is such a ridiculous practice, pursued by adults so that they are not forced to appoint people to teams, perhaps in doing so, creating greater balance.

And it does generate a natural inclination for those who are selected early on in the process as being preferable, to cheat and lie in order to maintain the status of their prowess.

We just love to vote in this country.

  • We can’t sit and enjoy music. We have to pit singers against each other.
  • We can’t even allow a chef to make a meal on television without having a food fight.
  • And we certainly manufacture awards for our children, to extol their macaroni and glue picture.

Although we insist that “all men are created equal,” we privately want to be supreme.

This is why I sometimes believe it would be better to appoint a President. Maybe we would consider things like qualifications, intelligence, resolve and willingness to work with others in the process instead of just how well he fills out a suit or can devise a cute tweet.

I often wonder if I would be further along if I campaigned instead of just created.

What if I promoted myself more than projecting my ideas?

What if I insisted on being given place instead of taking the place I’ve been given, and become insistent on great notions?

I don’t trust the vote. It is debilitated by human preference, the presence of ego and the chicanery of tricksters.

The very best jobs I have seen accomplished happened when people with a mature outlook on life admitted their weaknesses and appointed the right person to the right job.

Aficionado: (n.) a person who is very knowledgeable and enthusiastic about an activity, subject or past-time

I am almost certain that these two particular words NEVER, or perhaps better stated, RARELY, work together.

I am talking about knowledgeable and enthusiastic.

In my life I have encountered people who were knowledgeable, but the information they attained through schooling or experience had disembowled their enthusiasm.

Likewise, I have been in the company of those ablaze with enthusiasm, only to discover that their limited scope of comprehension had cursed the project to the great pit of ignorance.

Yes, it is a rarity to discover a human being who is both knowledgeable and enthusiastic, therefore fulfilling Webster’s definition of aficionado.

It is perhaps one of my primary goals in life–to learn the inner workings of my craft without becoming jaded, cynical or bored.

  • For I will tell you, the worst person in the world to teach you about the Constitution, government and the great American dream is a politician.
  • I have never found ministers to be a tremendous source for bolstering one’s faith through their personal testimony.
  • I certainly would not want to discuss lifelong love and fidelity with a prostitute.
  • In turn, becoming excited about the wonderful choices available in a restaurant is not always accomplished by talking to the chef or the owner.
  • And needless to even say, having an inspiring dialogue about the glory of music is doomed to failure if you are going to chat with the first violinist of a symphony.

My goal? To learn to do what I do better–while still maintaining a childlike heart, as if it were the first day on the job.

People often ask me  if I get tired, sharing the same stories and songs. You can sense that part of them WANTS me to be burned out. But there is a little boy or girl inside, who instead wants to leap for joy if I am still thrilled to be on my playground. So it is always my magnificent pleasure to inform them that each song I sing and each word I speak surprises me every night with new significance.

I would love to be knowledgeable. Just not snarly.

I desire to be enthusiastic. Could I do that without being inept?

“Aficionado” should be the goal of everyone who wants to see the world get better.

To do that, we have to learn the truth and allow it to set us free … instead of making us depressed.

 

Abalone

Abalone: n. an edible mollusk of warm seas that has a shallow ear-shaped shell lined with mother-of-pearl and pierced with respiratory holes. Also called EAR SHELL.

He was unnaturally attached to his daughter.

I’m talking about creepy stuff. So much so that he decided to kill her husband so he could have her all to himself. Since the father was a chef and the husband was also one, the weapon of choice was to poison some seafood with chicken salmonella and give it to this hapless young man as a gift to serve in his restaurant.

When the young chef served this particular delicacy, it made everybody sick, creating a secondary motive for someone to kill him other than the father who wanted to be wacky with the daughter. Do you follow?

I bring this up because the seafood selected to poison was abalone.

Now, it is a long drive (or swim, in this case) for me to find a connection to this mollusk, but I also learned, from listening to Goren investigate on Criminal Intent, that abalone is illegal to procure because it’s rare, and therefore extraordinarily forbidden–and for those who actually do acquire it–expensive.

I realize this doesn’t shed a lot of light on the life and times of this most uncommon mollusk, but it does explain why sometimes the only reference we have to certain words and ideas is through our own experience–or lack thereof.

So when I saw “abalone,” it made me think of Goren on Law and Order and the creepy dad who wanted to get too close to his daughter and killed her husband, emulsifying his body and bones in a meat grinder in the kitchen of his restaurant.

I’m sorry. It was the best I could do.
